Fette Sau is Williamsburg's beloved BBQ joint, rated best in the city three years running.
They only source meat from organic and/or family farmed heritage breed animals. The beef is Black Angus, the pork is Berkshire, Duroc, and Red Wattle, and the lamb is American. Even the smoking wood is locally sourced.
All their meats are smoked in-house with their own dry rub.
Their menu changes with the meat they are supplied, and they think that's a good thing. Check their website or stop by and see what's cooking.
