The Widow's Hole Oyster Company harvests the American Oyster, Crassostrea virginica, from the pristine waters of Greenport Harbor. In the 1890's over thirty oyster companies thrived in this one square mile village. By 1980, all had vanished from New York's oystering capital. WHO returned the renowned Greenport oyster to the plates of Manhattan in August of 2004. WHO cultivates oysters in pvc containers housed in cages. Sunk in waters from 5 to 15 feet deep, the animal's natural habitat, oysters grow quickly. We are along the ferry route to Shelter Island, at a narrow point in the Peconic Bay; thus, all of the bay's nutrients constantly are funneled across our oyster beds. Our proximity to New York allows us to harvest and deliver oysters the same morning, bringing the sparkling taste of freshly iced shellfish to the City.
